RAY’S COUNTY HAM BISCUITS ARE EVERYTHING!

For a quick game-watching snack, you’ll win big by offering a bunch of Ray’s Country Ham biscuits. For those who aren’t of the biscuit-making persuasion, we suggest grabbing some Pillsbury Grands frozen buttermilk biscuits from your grocer’s freezer section. We’ve offered a couple of quick spreads to serve with them too, but you can keep it simple with just some mustard and mayo!

  • Makes 1 dozen biscuits

    1-12 count package Pillsbury Grands Frozen Buttermilk Biscuits
    3 tablespoons Everything Bagel Seasoning, optional
    1-lb. Rays Country Ham slices

    Cook biscuits according to package directions (375F).  Spray with butter pan spray and dust with seasoning as you remove from oven.
    While biscuits are cooking, cut ham into biscuit size pieces. Put into a 12” cast iron (or oven safe) skillet.
    Once you remove biscuits from the oven, place skillet of ham in and cook for 8-10 minutes, tossing once or twice.
    While ham cooks, slice biscuits and mix spreads. Stuff biscuits and serve warm or room temp.  It just doesn’t get any easier than that.

    SWEET POTATO SPREAD

    Makes about 1 cup cooked sweet potato, mashed

    2 tablespoons mustard (we like whole grain/stone ground for texture)
    1 heaping tablespoon brown sugar (depending on sweetness of your potato)
    pinch of salt
    Blend mustard, sugar and salt into potato and serve at room temperature.

    Helpful hint: Cooked sweet potato pulp is useful in many ways. Bake several sweet potatoes at the time. Cool and peel. Put mounds of pulp onto baking pan and flash freeze. When frozen, put mounds into a zippered bag so you will have cooked sweet potato on hand anytime for this recipe and many others!

    SIMPLE SANDWICH SPREAD

    ¾ cup mayonnaise (we use Duke’s)
    2 tablespoons sweet pickle relish
    1-2 teaspoons sugar
    1 teaspoon granulated onion
    fresh cracked black pepper

    Stir all ingredients together. Great for your ham biscuits, sandwiches, salads and more. If you like, add a bit of dill also… for a vibrant dilly spread/dressing.
